Ingredients

Dough:

  • 3 Tbsp vegan butter
  • 3 Tbsp plant-based Butter

  • 2 tsp instant yeast

  • 1 cup plant-based milk

  • 1 Tbsp sugar

  • 1/4 tsp salt

  • 2 cups flour

  • 1/3 cup Green Boy Protein (we used Fava Bean)

    Filling:

  • 3 Tbsp plant-based Butter

  • 1/4 cup sugar

  • 1 Tbsp ground cinnamon

    Glace:

  • 1/2 cup sugar

  • 1/2 lemon

1 Heat plant-based milk and plant-based butter until melted. (make sure it’s not too hot, so it doesn’t kill our precious yeast)

2 Pour into a large bowl, add the yeast and let it activate for 10 minutes. Then add 1 Tbsp sugar and salt and stir.

3 Add in ½ cup of flour at a time and mix

4 Add Green Boy Protein (we used Fava but any of them will work) and knead into a ball. Put the dough back in the bowl cover it and let it rest in a cozy, warm place for 1 hour

5 Filling: Boom, our dough has been busy doubling in size. Next, melt plant-based butter and roll out dough on a floured surface. Spread butter and make it snow sugar and cinnamon.

6 Roll it, cut it, sort it and preheat the oven to 350 degrees F (176 C). Put the cinnamon rolls on top of the oven or closeby so they can rise, while it preheats.

7 Once it’s preheated, bake the cinnamon rolls for 25-30 minutes or until they are gold brown.

8 Top with a sugar lemon glace (just mix ½ cup sugar with lemon juice adding it gradually until you get a creamy, thick consistency.

9 Enjoy responsibly or all in one go – we leave that part up to you!
